Lukewarm tomato salad with mozzarella and currants

Ingredients for 4 people:

Juice of 1 orange
1 tbsp maple syrup
1 tsp grated organic orange zest
1 pinch chilli flakes
2 tbsp olive oil
Salt
1 bunch spring onions
500 g cherry tomatoes
250 g mozzarella (drained)
100 g red currants

1. Simmer orange juice with maple syrup, orange zest and chilli flakes for 2-3 minutes. Stir in olive oil and season to taste with salt.

2. Clean, rinse and finely chop the spring onions. Rinse the tomatoes, clean and halve. Heat a large dry frying pan. Sauté the tomatoes. Fry briefly over a high heat. Season with a little salt. Add the spring onions and dressing and heat through briefly. Put the tomatoes on plates.

3. Cut the mozzarella into wedges. Rinse the redcurrants and remove the berries from the berries from the vine with a fork. Arrange the mozzarella and currants on the tomatoes. Serve immediately.
