Fennel salad with mozzarella towers

Ingredients for 4 people:

400 g mozzarella (preferably as a stick)
4 tbsp ajvar
4 tbsp freshly grated parmesan
2 fennel bulbs, approx. 500 g
Juice of 1 lemon
Salt, pepper
2 tsp maple syrup
2 tbsp olive oil
40 g black olives (pitted)

Preparation:

1. Drain the mozzarella and cut into slices. Mozzarella slices with Ajvar and sprinkle with Parmesan. Assemble Mozzarella into towers. Rinse the fennel and set the greens aside.

2. Clean the fennel and slice into thin strips. Mix the lemon juice with salt, pepper, maple syrup and olive oil to make a marinade. Mix the fennel with it. Halve the olives and mix in.

3. Arrange the fennel salad with the mozzarella towers.

4. roughly chop the fennel greens and sprinkle over the top.

Tip: Serve with toasted baguette slices.
