Tarte flambée Mexico

Ingredients for 4 people:

1 onion
120 g giant beans (from a can)
2 spring onions
100 g cherry tomatoes
1 jar of baby corn (110 g drained weight)
1 chilli pepper
1 tablespoon salsa
100 g crème fraîche
2 tortillas (wheat patties, approx. 38 g each)
To taste:
Chilli and leek to garnish

Preparation:

1. Peel onion, chop finely. Rinse and drain the beans. Clean and wash the spring onions and tomatoes. Cut spring onions into rings and cut the tomatoes in half. Drain the sweetcorn and chop the chillies.

2. Mix the salsa and crème fraîche together. Place the tortillas on a baking tray lined with baking paper. Spread the cream over the tortillas. Spread the prepared ingredients and bake in the preheated oven (electric oven: 220°C/gas mark 4) for about 15 minutes. Serve garnished with chilli and leek tips.
